Hello! Thanks for stopping by, I hope you’re having a lovely holiday weekend! You know how they say that Breakfast is the most important meal of the day? That works out very well for me, considering that it is probably my favorite meal, at least my favorite foods. I’m always on the search for new and delicious day-starters. This breakfast recipe inspiration came to me while thinking about my Grandpa’s Banana Cream Pie. He had a bakery and my cousins Michelle and Neil and I would occasionally go help him on Saturday’s when he would take his pies to sell at a local flea market. His banana cream pie was ridiculous. I mean, really. Stupid good. While I wouldn’t dare try to replicate his actual pie (I’m not a baker so much), I love the thought of a healthier version of this treat, in the form of a banana cream pie parfait. This delightful treat makes an extremely satisfying breakfast, or also masquerades nicely as a dessert!
Banana Cream Pie Breakfast Parfaits

Ingredients
- Banana Cream Light Non-fat Yogurt
- ¹/3 cup Kellogg’s All-Bran Buds
- 1/2 banana
- Cinnamon
- 2 T. Cool Whip Lite (optional)
Directions
Spoon 1/2 container of banana cream yogurt into a parfait glass. Sprinkle 1/2 of the All-Bran Buds on top of the yogurt. The All-Bran Buds provide a wonderful crunch and make a perfect healthy crust alternative.
Top with some banana slices, and a good sprinkling of Cinnamon.
When I want this as a dessert, I can simply add a little Cool Whip Lite layer into the mix! Smooth about 2 T. on top of the banana layer. I like to use the Cool Whip when it’s been out of the freezer for about 30 minutes (or microwaved for about 20 seconds). The partially frozen texture makes it feel like there’s ice cream inside, and adds a creamy, decadent quality to dress this breakfast up for dessert!
Top with the remaining yogurt and All-Bran Buds, a few more banana slices and another healthy sprinkle of Cinnamon, and there it is. These are so delicious and satisfying, a great way to start (or end ๐ ) the day! And btw, this works famously with Coconut Cream Pie yogurt too!
