Hi friends! I hope you’re enjoying summer so far. One of my absolute favorite things about summer is all of the fresh fruit in season. Putting groceries away in our fridge is like a wacky puzzle/Jenga game because it’s so full of fruit cartons! We had weather in the 90s here this past weekend which called for some refreshing Berry Shortcake.

My Berry Shortcake was made with another one of my favorite summer delights, Outshine® Simply Yogurt Bars. I’ve always loved Outshine Fruit Bars (Creamy Coconut is my fav!) and now they have come out with a variety of deliciously creamy yogurt bars. It’s like frozen yogurt on a stick! They are made from real yogurt, contain no GMOs, artificial flavors or colors and are gluten and fat free. These bars totally satisfy that summer ice cream craving that rears it’s head on those super hot days (or just any day 😉 ). P.S. You can get the printable recipe card is at the bottom of the post.

Summer Berry Shortcake

For my version of Berry Shortcake I melted, blended and then froze Strawberry and Blueberry Outshine Simply Yogurt Bars to make a berry frozen yogurt. This was delicious as-is!

Next I fill dessert shells with the berry frozen yogurt and topped with fresh blueberries and sliced strawberries. Don’t you love the versatility of  dessert shells? They’re perfectly portioned for 1, are only 80 calories and make a perfect little nesting place for a variety of yummy treats.

These are so perfect for summer – light, refreshing and COLD!

Ingredients

• 2 Strawberry Outshine Simply Yogurt Bars
• 2 Blueberry Outshine Simply Yogurt Bars
• 8 dessert shells
• Fresh strawberries & blueberries

Instructions

 

• Remove Outshine Simply Yogurt bars from freezer and allow to just melt.
• Blend melted strawberry and blueberry yogurt bars together.
• Freeze for at least 3 hours.
• Scoop frozen yogurt into dessert shells.
• Top with fresh strawberries and blueberries.
