Hello friends, happy weekend! Is it single digit weather where you are? It is here, I’m afraid. But hey, that’s ok. I don’t know about you, but sometimes I like having an excuse to stay in and cuddle up with cozy blankets and eat some comfort food!
Comfort food can get a bad rap, but it doesn’t have to be heavy and fattening. That’s right friends, you can still enjoy comfort food while rocking out your New Years Resolutions! Case in point, my new breakfast of champions… Sweet Earth Functional Breakfast Burritos. These breakfast burritos are so hearty, delicious and satisfying that they fit the comfort food bill to a tee. They also fit into your New Years Resolutions to a tee since they’re made from wholesome, plant-based ingredients which help to sustain a healthy body.
Sweet Earth Functional Breakfast Burritos come in many delicious varieties; my latest obsession is the Protein Lover’s. The obsession starts with the flax seed wrap and goes all the way through. This thing is FULL of flavor and super foods (yet completely meatless)! Have you ever thought of quinoa in your breakfast burrito? Now you will have it no other way. For reals!
We got our brunch on today on this cold morning with Sweet Earth Protein Lover’s Functional Breakfast Burritos and delicious smoothie shooters. This will be heavy on the brunch rotation around here! It’s such a quick and convenient meal so it’s perfect for a weekday breakfast in addition to a gourmet weekend brunch. The breakfast burritos can be prepared in the microwave or in a conventional oven, since I was in no hurry today I wrapped them in foil and baked them in the oven.
The smoothie shooters are a bright, sweet partner to the savory, hearty breakfast burritos and also easy to make (and fit into your New Years Resolutions, of course).
- 1 cup vanilla greek yogurt
- 2 bananas (I freeze too-ripe bananas to use in smoothies in lieu of ice)
- 1 cup blueberries
- ½ cup milk
- ½ cup shredded coconut
Combine all ingredients in blender and serve in shot glasses for a perfect accompaniment to any of the Sweet Earth Functional Breakfast Burritos.
