Hi there guys! Happy hump day! You know what else today is? Apparently it’s #NationalRootBeerFloatDay according to the hashtag holiday calendar managers. Btw, who are these people?! Everyday is a National (fill in the blank) Day; is there a calendar? Lucky for me, I am prepared for National Root Beer Float Day. It inspired me to try a recipe I’ve been imagining in my head for quite awhile now. I can stop imagining now… I can stop fearing that it will be better in my head than it is in real life. It’s even better in real life!
So I’ll have to ask you to stick with me here for a few minutes. What I’m about to tell you may sound very odd and may evoke in you either a feeling of giddy anticipation, or utter puzzlement as to what the heck I was thinking. I promise you, it will be worth it!
First of all, this recipe does contain adult libations, so if you are under 21, please put it into your pocket until your 21st birthday celebration. If you are of legal drinking age, please join me for this tasty delight!
Not Your Father’s Root Beer Float

2 mins prep time 1 serving (multiply as needed!)
Ingredients
- 2 scoops Coconut ice cream or gelato (I loove Talenti Carribean Coconut gelato!) If you’re not a fan of coconut, you can substitute Vanilla.
- 1 bottle of Small Town Brewery Not Your Father’s Root Beer * This is actual beer in case you haven’t heard of it or not a beer drinker. You would never know this was beer if someone didn’t tell you, it tastes nothing like beer! You won’t need a full bottle for the float, so you can just enjoy sipping the remainder 😉 )
- 1 tablespoon-ish Kahlua. If you don’t like coffee flavor, this can be left out.
- 1 tablespoon shredded sweet coconut
Still with me?
Directions
Scoop gelato or ice cream into a sundae glass.
Drizzle Kahlua on top.
Pour beer slowly over ice cream. The ice cream will float up (haha) so if you fill the glass too quickly you’ll get a nice splash.
Sprinkle shredded coconut on top.
Aaaaand, a little more beer…

This (not your father’s) root beer float is so scrumptious! It has the perfect amount of spice and froth like your traditional root beer float; the coconut brings such a smooth and refreshing tang, and the Kahlua a depth that really makes it feel grown up (I always felt grown up when I drank coffee as a kid, anyone else?)
