I love portable food at a party. There’s nothing worse than everyone crowding into a kitchen to stare down the appetizer table, right?! Especially when there is basketball to be watched!
March is such a fun and exciting time for college basketball lovers with the big tournament and regardless of whether or not our team makes it in, we always enjoy watching the tournament with friends and tasty eats.
A cheese ball is one of my favorite party foods to nosh on, but they really aren’t so great for the afore mentioned reason. That’s why I love the idea of these portable Sour Cream, Onion & Herb Mini Cheese Ball Bites… no need for crackers, knives and plates, its all wrapped up in a perfect little bite on an easy to grab food pick. You don’t even have to try to do the calculations on the cracker to cheese ball ratio, because these little bites of delight are wrapped in a crunchy blanket of Pringles Sour Cream & Onion Potato Crisps!
Btw, which do you always end up needing more of? I’m notorious for underestimating the number of crackers needed to finish the amount of cheese ball or dip. #Annoying. Pringles Sour Cream & Onion Potato Crisps make a perfect game day (or anytime, really) snack for the same reason, they have the dip flavor built right in.
These mini cheese ball bites are filled with a savory blend of cream cheese, gouda and delicious herbs and the sour cream and onion from the Pringles rounds out the flavors perfectly.
Mini Cheese Ball Bites

Ingredients
Pringles Sour Cream & Onion Potato Crisps, crushed
1 – 8 oz. package cream cheese, room temperature
1 cup Gouda cheese, grated
1 tablespoon sour cream
½ teaspoon dried Basil
¼ teaspoon Rosemary
¼ teaspoon thyme
Salt and pepper to taste
Directions
Combine cream cheese, gouda, sour cream, basil, rosemary, thyme, salt and pepper in a small bowl. Mix well (I get in there with my hands!)
Tip: Gouda will grate easier if you stick it in the freezer for about 20 minutes since it’s such a soft cheese.
Refrigerate for at least 1 hour.
Roll cheese mixture into small balls (about 1 ½- 2 tablespoons) and set aside.
Crush Pringles into a bowl, forming large crumbs.
Roll cheese ball bites into Pringles crumbs until completely coated.
Place a food pick in each of the cheese ball bites and serve.

Can you use dry thyme and rosemary or so they have to be fresh?

Hi Tracie! Yes you can absolutely substitute dried herbs, you may want to play with the quantities a little as the potency can often vary between dried and fresh herbs. Either way they’re delicious, I hope you enjoy! 🙂

Have you made these a day ahead? Wondering how the Pringles will hold up their crunch?

I haven’t but I am not sure that the Pringles would hold up in the fridge as far as crunch goes. You could try making the cheese balls and the Pringles crumbs (kept in a ziploc so they stay crunch) the day before and then just roll them in the Pringles crumbs when you’re getting ready to serve them.
