Hello my friends! We’re just days away from Christmas and Hanukkah, are you ready?! I’m soooo not! In fact I can’t think of a year I’ve been less prepared for Christmas. But you know what? It’s ok. I’m not going to stress. I will do what I can do and stop often to remind myself what the holiday is all about. And take some deep breaths…. 😉

Hi, Melissa from Made by Melissa Lee stopping by again to share with you one of my favorite seasonal treats, Holiday Eggnog Quick Bread!
I love this time of year, don’t you? There are Christmas carols are on the radio, the neighborhood’s decorated with festive lights and there’s a feeling like it could snow at any moment. Yes, the 2016 holiday season is in full swing!
With the holidays comes all sorts of delicious treats. At every turn there’s a plate of cookies, delicious fudge and the ever elusive holiday fruit cake. No matter what your holiday tastes may be, this moist and flavorful eggnog quick bread is a hit with everyone who tries it! Yes, even those who say they don’t like eggnog.
I’m actually not much of a fan of drinking the beverage myself. There’s just something with the consistency that gets me. However, eggnog flavored treats? I’ll take plenty of those, please! I love its flavors, which are generally cream, nutmeg and rum. The scent just immediately puts me in the Christmas spirit!
When you see me loading up my grocery cart with boxes of it, you can be rest assured I’ve got some eggnog flavored treats to make, including this holiday bread! Since the eggnog’s baked right into it, there’s no consistency issue for me to deal with, just a delicious Christmas-y flavored treat.
Oh and did I mention how easy it is to make? If you’re like me, you’ve probably got a lot of baking to do in the month of December. Don’t get me wrong, I blast the Christmas tunes, make myself a little hot cocoa and I love every minute of it, but there is a lot to get done! There’s no time for me to make anything too fussy. Who’s with me on that one?
This bread comes together in a matter of minutes. It’s a simple, standard quick bread that’s easily made without the standing mixer. I love my Kitchenmaid mixer as much as anyone else, but it’s nice to give her a rest every now and again, especially when she’s working in overdrive right now!
While the bread’s baking you can whip up the easy, yet delicious, eggnog glaze as a final touch for this holiday treat! Just to note, when giving this as a gift I put the glaze in a small container for the recipient to drizzle on themselves. Otherwise it’ll make a sticky mess when wrapped up in foil or plastic, which no one wants!
Holiday Eggnog Quick Bread
- 2 cups all purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 tsp. ground nutmeg
- 1/2 - 3/4 cup dried cranberries optional
- 2 eggs
- 1 cup eggnog traditional flavor
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter melted and slightly cooled 1 tsp. vanilla extract
- 2 tsp. rum extract
- 1/2 cup confections sugar
- 2 Tbs. eggnog traditional flavor 1/4 tsp. rum extract
- 1/8 tsp. nutmeg
- Pre-heat oven to 350 degrees. Spray a 9x5 inch loaf pans with cooking spray and set aside.
- In a large bowl, stir together the flour, baking powder, salt, nutmeg and dried cranberries.
- In a medium bowl, whisk together the eggs, eggnog, sugar, butter and extracts.
- Slowly add the wet ingredients to the dry ingredients and stir until just combined and nostreaks of flour remain. Pour into prepared pan and bake about 45 minutes or until atoothpick inserted in the center comes out clean. Remove to a wire rack and cool.
- While cooling, prepare the glaze by combining the confectioners sugar, eggnog, rum extract,and nutmeg in a small bowl. Remove bread from loaf pan, drizzle on glaze and serve.
