Have you ever heard the term “brinner”? Well it’s one of my favorite meals… breakfast for dinner! Breakfast food is far too good to be limited only to the morning, especially when that’s often the most hurried meal of the day. With brinner, you can prepare delicious breakfast food and actually take the time to enjoy it along with those who also enjoy it.
The staple of any good brinner is hash browns. I mean, who doesn’t love crispy, savory hash browns?! We love Hungry Jack because they’re made from 100% real potatoes, are super easy to make and 100% delicious. One of our favorite hash brown accompaniments is breakfast (well, technically in this case brinner) tacos. I often order breakfast tacos or burritos in restaurants if I go out and I love preparing them at home because they’re so easy to make. I love setting up a taco bar because then everyone can have their taco made to order with whatever fillings they prefer. I like mine on the more simple side, with salsa, cheese and onion, while Ryan likes his maxed out with every topping offered.

Breakfast Tacos
Ingredients
- Scrambled eggs
- Flour or corn soft taco tortillas
- Shredded cheddar cheese, diced green peppers, salsa, guacamole, diced tomatoes, green onions, chiles and any other toppings you'd like
Instructions
- Adjust the recipe to the quantity of people you will serve.Prepare scrambled eggs, add to tortilla shells and top with desired toppings.
