Who else is looking forward to Christmas morning? Do you have any special Christmas morning traditions? Loading in the car and traveling to see family? Opening presents? Watching the Santa parade? Sleeping in? My Christmas tradition for many years has been enjoying breakfast and coffee with my dad, followed by opening presents and watching A Christmas Story approximately 2.4 times as the marathon runs on TBS. Every year I notice something new in the movie… I have no idea how that’s possible as many times as I’ve seen it! And every year my dad and I say “Fuuuuuudge” along with Ralphie. Every.year. Yessss, this is the stuff of memories my friends!
This year there will be a new tradition established, and it involves these Banana Chocolate Chip Muffins. Christmas morning… muffin in one hand, coffee in the other, A Christmas Story on TV. Yep I see this in my very near future! There is usually such a big feast to put the cap on Christmas Day, so I love the idea of starting out the morning with these delicious muffins. Usually muffins have a ton of sugar, but not these! I swapped out sugar in favor of SPLENDA®! I’m so excited that I found a way to enjoy one of my favorite recipes without all of the extra calories from sugar. But they are still every bit as delicious. My muffins also contain yogurt so they provide additional protein which helps keep you fuller longer (in preparation for aforementioned feast! 😉 ) and also makes them super moist!

Banana Chocolate Chip Muffins

Yield 12 muffins
Ingredients
- ¾ cup SPLENDA® Granulated No Calorie Sweetener
- 1 ½ cups flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup bananas, very soft or even mushy (about 3 medium bananas)
- ¼ cup nonfat banana yogurt (if you don’t have banana, plain or vanilla work fine as well)
- 2 tablespoons unsalted butter, softened
- 1 egg
- 2 teaspoons vanilla
- ¾ cup chocolate chips
Directions
Preheat oven to 350º. Spray a 12 cup muffin pan with nonstick cooking spray or line with cupcake liners.
In a medium bowl, whisk together SPLENDA®, flour, salt and baking soda.
Add bananas, butter, egg, vanilla and yogurt to a blender or food processor and blend well.
Add dry ingredients and blend until smooth and creamy.
Add a ½ cup of the chocolate chips and fold gently into the creamy mixture.
Spoon into muffin pan, distributing filling evenly. Sprinkle with remaining chocolate chips. I’m bringing back my mellon baller trick to fill the muffin cups, remember that one? 😉
Bake 15 – 18 minutes (they’re done with an inserted toothpick comes out clean).
Cool on a rack for 10 minutes.
