If you were to ask me what my favorite Thanksgiving dish is, before you could even get the question out I would exclaim, “the stuffing!” I honestly would be perfectly fine with having just stuffing as my Thanksgiving meal and then some stuffing for dessert. Yep, I’m a fan.
For years we have always had the traditional stuffing; in the bird, standard bread crumbs, maybe the occasional apple or nut variety, etc. I’ve been wanting to try sausage cornbread stuffing for several years now, and today is the day. Whoa! This stuff is like a party in your mouth! The cornbread brings a touch of sweetness to the party; Jimmy Dean nails it with the delicious addition of savory sage in their premium sausage roll.. and the parsley is a wonderful, bright finale. Why did I wait so long to try this holiday delight? I highly recommend switching up your standard stuffing this holiday season and trying this tasty alternative. Sausage is for more than just breakfast!
Sausage Cornbread Stuffing
Prep Time: 20 minutes Cook Time: 45 minutes Makes 8 (1 cup) servings (Printable recipe card below)
Ingredients

- 1 package Jimmy Dean® Premium Pork Roll Sausage Sage
- 2 cups chopped celery
- 1 cup finely chopped onion
- 4 cups coarsely crumbled cornbread, toasted
- ¼ cup chopped fresh parsley
- 1 teaspoon poultry seasoning
- 1 cup chicken broth
- 1 egg, lightly beaten

Directions
Cornbread:
Bake 1 package (8.5 ounces) corn muffin mix according to the package directions. Cool, then coarsely crumble. To toast the crumbled cornbread, preheat oven to 400°F. Spread the cornbread onto bottom of large shallow baking pan. Bake 10 minutes or until lightly browned, stirring after 5 minutes.
For Stuffing:
Preheat oven to 325°F. Cook sausage, celery and onion in large skillet over medium-high heat for 8-10 minutes or until sausage is thoroughly cooked, stirring frequently.
Drain and spoon into large bowl.
Add cornbread, parsley and seasoning; mix lightly. Add broth and egg; mix until just blended.
Spoon into lightly greased 2-quart casserole dish; cover.
Bake 45 minutes or until thoroughly heated, uncovering after 35 minutes.
