Hi there! So today I’m talking lightening up some familiar recipe faves by using Spaghetti Squash instead of (fill in the blank). Last month I shared my newfound love of this oblong delight, and since this discovery I have been on the hunt for new recipes to try.
With these amazing recipes, I feel like I’m going all Folgers Crystals with it (anyone remember those commercials?!) to see how I can secretly replace (fill in not-so healthy ingredient) with Spaghetti Squash and see if anyone can tell the difference.
Spaghetti Squash Pizza Crust
I may or may not have wanted to lick my computer screen when I saw this delicious looking Margherita pizza with a Spaghetti Squash crust by A Beautiful Mess. I know about a Cauliflower pizza crust, but the spag squash crust, ah brilliant! I find that Spaghetti Squash makes a scrumptious complement to tomatoes or tomato sauces/bases. The (fill in the blank) on this one, the carby crust!

Cincinnati Chili with Spaghetti Squash
Since moving around the corner from a Skyline Chili last year, I’ve had a craving for their Cincinnati chili. My favorite style is the 5-way, but it’s just too much of (a bunch of the fill in the blank ingredients!). I lightened up this recipe by substituting the spaghetti with it’s faux counterpart (the squash), and reduced fat cheese. It hit the spot and totally squelched my craving.

Hi Sonia! If you don’t have spaghetti squash, you can make noodles with many more veggies with this cool gadget I just found called a Vegetti (if you haven’t seen it in stores near you, check it out here. I saw it on TV (I sometimes get sucked into infomercials late night when insomnia strikes!) 😉 I used it with Zucchini and Summer squash so far and it worked great! Let me know what you end up trying! 🙂
