Combine cream cheese, gouda, sour cream, basil, rosemary, thyme, salt and pepper in a small bowl. Mix well (I get in there with my hands!)
Tip: Gouda will grate easier if you stick it in the freezer for about 20 minutes since it's such a soft cheese.
Refrigerate for at least 1 hour.
Roll cheese mixture into small balls (about 1 ½- 2 tablespoons) and set aside.
Crush Pringles into a bowl, forming large crumbs.
Roll cheese ball bites into Pringles crumbs until completely coated.
Place a food pick in each of the cheese ball bites and serve.
