Holiday Eggnog Quick Bread

Flavored with one of the seasons most iconic beverages, this Holiday Eggnog Quick Bread will be a new favorite with everyone who tries it!

Ingredients
  

Bread

  • 2 cups all purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 tsp. ground nutmeg
  • 1/2 - 3/4 cup dried cranberries optional
  • 2 eggs
  • 1 cup eggnog traditional flavor
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter melted and slightly cooled 1 tsp. vanilla extract
  • 2 tsp. rum extract

Glaze

  • 1/2 cup confections sugar
  • 2 Tbs. eggnog traditional flavor 1/4 tsp. rum extract
  • 1/8 tsp. nutmeg

Instructions
 

  • Pre-heat oven to 350 degrees. Spray a 9x5 inch loaf pans with cooking spray and set aside.
  • In a large bowl, stir together the flour, baking powder, salt, nutmeg and dried cranberries.
  • In a medium bowl, whisk together the eggs, eggnog, sugar, butter and extracts.
  • Slowly add the wet ingredients to the dry ingredients and stir until just combined and nostreaks of flour remain. Pour into prepared pan and bake about 45 minutes or until atoothpick inserted in the center comes out clean. Remove to a wire rack and cool.
  • While cooling, prepare the glaze by combining the confectioners sugar, eggnog, rum extract,and nutmeg in a small bowl. Remove bread from loaf pan, drizzle on glaze and serve.
