Hi there, I hope you’re week is going well! I think the fall weather is here to stay, we’ve had the heat on for 3 days now. I think the switch that turns on the heat is connected to the switch in my brain that craves soup because every year they happen simultaneously. I’ve been waiting for that switch to go off so I can share with you one of my favorite little recipes, Tomato Soup and Grilled Cheese Croutons.
Tomato soup and grilled cheese go together like baseball and cracker jacks. Pardon the random baseball analogy, I’ve got baseball on the brain with my original home team and adopted home team both in the World Series this year. Quite the dilemma, who do I root for?! Anyway, you get the point. Tomato soup + grilled cheese = all kinds of yumminess.
My little spin on this comfort food classic is so easy it’s cheating really. My “grilled cheese” comes in the form of rosemary croutons. My Homemade Baked Rosemary Croutons (you can see the recipe here) are still up there with one of my favorite creations and the savory rosemary is the perfect middle man to the sweetness of the tomato soup and the sharpness of the cheddar in this combo.
Tomato soup and grilled cheese croutons make a great snack or party appetizer served in shot glasses (you know I’m obsessed with foods in shot glasses right?), or a meal with the croutons on top of the soup in a bowl (think oyster crackers with soup but soooo much better).
Tomato Soup and Grilled Cheese Croutons

You can use canned tomato soup or try this delicious recipe from Foodtastic Mom.
All you have to do to turn the rosemary croutons into little grilled cheese bites of delight is top them with cheddar and pop them under the broiler until the cheese melts.
And serve!

As soon as I feel a chill in the air, I start making soup! Made my mom’s chicken and rice soup last night. Love adding lemon juice just before serving.
